About Caves of Faribault - Drawing

The ideal temperature and humidity conditions of the legendary sandstone caves of Faribault, Minnesota allow native blue-green molds to flourish. The earth has provided a perfect, natural setting, leaving its mark on the complex flavor profiles of each unique cheese.

AmaBlu® Blue Cheese

America’s first Blue cheese is cave-aged for a minimum of 75 days making it a creamy and delicious addition to steaks and hamburgers fresh off the grill.

Felix Blue Cheese

Named after the founder of Faribault’s caves, Felix Frederiksen this Blue Cheese is made in a similar style to AmaBlu; however, we allow the sandstone caves to create a natural rind that picks up on the different microflora that inhabit the caves. The cheese is aged a minimum of 60 days. The combination of the edible (but optional) natural-rind and unique aging process creates a dense, fudgy texture with sharp, piquant complexities and a distinct rind flavor that highlights the terroir of the cave.

AmaGorg® Gorgonzola

Cave aging for a minimum of 90 days gives our AmaGorg® Gorgonzola a sweet flavor profile that pairs well with wine, chicken, or on a cheese board with dried fruit and nuts.

Whether you’re new to our brand or a long-time friend, you’ve probably noticed we are pretty passionate about our cave-aging process.  (After all, it’s in our name!)  Most recently, we even made our caves the star on our redesigned packaging, highlighting the important role they play in the making and aging of our one-of-a-kind cheeses.  So what’s so fascinating about them?  We asked Affinage & Warehouse Manager Tara Schaal to lift the veil on the what goes on inside those majestic bluffs and how it translates into great tasting cheese.
